Coconut Gingered Carrot Soup

This dairy free Coconut Gingered Carrot detox soup, is easy to make and packed with anti-inflammatory foods to lower inflammation and help reduce belly fat. It's been a weekly staple in my household for 15 years and it's my go to soup; when I need to slim down before a modeling shoot or tv commercial. Serve it with a side of grilled asparagus to help reduce water retention and decrease bloating. The best part about it is you can serve it cold or serve it hot. It's an easy detox soup that your family will love! Just don't mention the word detox ;)



INGREDIENTS


2 Tbs. coconut oil

2 medium leeks, white and light green parts only, thinly sliced

3 - 4 green scallions, chopped

3 Tbs. ginger root, minced

4 Tbs. dry sherry or white wine

3 lbs carrots

4 cups vegetable broth (I highly recommend Better than Bouillon)

1 tsp. ground ginger

1 tsp. tumeric

1/2 lemon juice

Sea salt, to taste

1 can full-fat coconut milk

(Don't use light coconut milk, it will come out watery. Plus you want the nutritional benefits of the full fat coconut milk.)



INSTRUCTIONS

  • Wash leeks very well and prep vegetables

  • Heat coconut oil in a large soup pot over medium heat. Add the ginger root, leek, scallions and cook, stirring occasionally. Cook the vegetables for about 5 minutes until they slightly brown. Add the sherry and carrots, and stir well to cook for about 1 minute.

  • Add the broth, ground ginger, turmeric, lemon and salt to taste, and bring to a boil. Reduce heat to a moderate simmer, cover, and cook until the carrots are tender, about 30 minutes.

  • Purée soup with an Immersion Hand Blender make sure the consistency is smooth. Add coconut milk, and stir.

  • Return pot to stove top and reheat briefly. Careful do not let soup boil. Feel free to add additional coconut milk if desired. Garnish with either cilantro, parsley, coconut flakes, or a lemon twist.
